MAKING MAGNIFICENT MATCHA MACARONS (MMMM)

Beautiful, green and delicate - MATCHA macarons will impress and delight all those who come across them.

Matcha Macarons

Ingredients for Shells(36 complete macarons):

  • 1 and 3/4 cups confectioners' sugar
  • 1 cup almond flour
  • 3 large egg whites, at room temperature
  • 1/4 teaspoon cream of tartar
  • Pinch of salt
  • 1/4 cup superfine sugar
  • 2 to 3 drops gel food coloring (see below)
  • 1/2 teaspoon vanilla, almond or mint extract
  • 1 stick unsalted butter, softened
  • 1 tablespoon milk
  • 1/2 teaspoon MATCHA powder

MATCHA Buttercream ingredients:

  • 1 tablespoon MATCHA powder
  • 1 tablespoon milk
  • 1 stick unsalted butter, softened
  • 1 cup confectioners' sugar

Preheat the oven to 300 degrees F using the convection setting.

Whisk together sugar, almond flour and matcha.

Sift the dry mixture through a fine-mesh sieve into a large bowl.  This might take a while so be patient.

Beat the egg whites, cream of tartar and salt with a mixer on medium speed until frothy. Turn up the speed to medium high and gradually add the superfine sugar and beat until stiff and shiny (5 minutes or so).

Fold this into the sifted dry mixture until fully incorporated.  You're ready when the mixture slides off the spatula in a thin flat ribbon.

Transfer the batter to a pastry bag fitted with a 1/4-inch round tip. Pipe out 1 and 1/4inch circles (72 total) onto 2 layers of baking sheet to protect bottoms from heat.

Leave out at room temperature for 30 minutes.

Bake at 300 degrees F on convection setting until cookies are slightly shiny (20 minutes).

Time for the filling!

Beat butter on high and add powdered sugar and matcha powder.  Add milk and continue beating on high for another 3 minutes until desired consistency is achieved.

Pipe cream onto upside down cookie and top with another.  Voila!  MATCHA macarons!
